Pumpkin & ginger teabread

"I've made this cake for years it's brilliant & freezes well. I look forward to making 4 or 5 teabreads from one pumpkin every autumn. But I've had a disaster this year. And I notice lots of other comments about the cake being soggy in the middle & not cooked. Have the pumpkins been forced in some way, this year? Are they wetter than usual? Has anyone got over this. All I can think of is to reduce the pumpkin by half, to reduce the moisture. I've re-read the recipe to check the ingredients, but I've done nothing diffierent from previous years. Would love to hear comments from other people."

Classic Christmas pudding

"This is fabulous. We all love this pudding. I have made this each year since first published in 2002. Sometimes we eat all the puddings. Sometimes I forget one & find it in the cupboard the following year & its still great & once I deliberately saved one for Easter. Steaming in the oven has to be the easiest cooking method, I just leave it to simmer for hours & for the time given for 2 * 2pint puddings, yet I split the mixture between 3 * 1 and half pint basins "

Fruit, oat & seed bars

"Not tried this - but I do make flapjacks with same ingredients except for the fruit (sounds delicious). I always line the tin with baking parchment so I can get them out Must be baking parchment, greaseproof paper doesn't work the same"

Strawberry jam

"I have made strawberry jam successfully for years. last year was the only time when the jam didn't set. Every year we pick fruit at the farm & start to make jam as soon as we get home - really fresh srawberries. Last year the weather at weekends was so awful, that we didn't go fruit picking, I still made jam but with bought strawberries. This is the only thing I did differently. My advice is make a day of jam making & including getting really fresh fruit. You really can't beat home made jam - its not difficult, a little time consuming but fabulous taste & flavour. I can't wait for the weekend, load up the kids, pick fruit & jam made before bedtime! A brilliant family day out with results we all enjoy."
