"I have made these three times in the last three weeks. Once with half a tsp of baking powder (they didn't really rise - still tasted delicious though!), once with one tsp of baking powder (rose a little bit more) and now, tonight, with 2 tsps of baking powder (as recommended by Sally above) and they have risen beautifully - they look just like the muffins in the picture. I haven't tasted them yet, but I'm sure they'll be delicious as usual. I'll definitely be using 2 tsps of baking powder from now on, so thanks very much for that tip, Sally!"

Herby salmon & couscous parcels

"If you're cooking for one, as I was, make the cous-cous recipe as is, then use half with the salmon parcel and keep the other half to have the next night (perhaps with chicken this time) - or have it for lunch the next day with some roasted veg. I used lemon zest & juice, plus a chopped garlic clove to flavour my cous-cous and that was lovely. Super easy and lovely meal for mid-week dinner. Highly recommended!"

"DE-LICIOUS!!! I halved everything as there was only me and it worked great. What's brilliant about this is that in the time it takes the fish to steam you can cook some rice and broccoli and you have a fab meal on your plate in no time at all. Next time I will mix the soy sauce and the lime juice/zest together first and then pour it over the fish. Wonderful, easy meal which is def going to become a regular in my house."

"This is a delicious recipe and a great one for the freezer as there's no loss of taste when defrosted. I usually make loads of this, sometimes with the addition of chilli, sometimes not. If you know you're going to be home later from work than usual, then this is a great recipe to have to hand. I would definitely recommend it."

Mild chilli & bean pasta bake

"This is easy enough and tasty enough for a mid-week meal but not anything special. One good thing about this recipe is the portions are huge - so it's good if you're feeding hungry people - you could easily make this feed six if you served it with a salad as well. It's not bad, but I wouldn't be in a terrible hurry to make this again, there's many more delicious meals to be had."
