"Lovely cheesecake. Turned out very well with no cracks despite my fears. I think I probably overcooked it slightly though. I would agree with the addition of extra vanilla. I added more digestive biscuits as I love a good thick base! but reduced the amount of sugar slightly to 160g. Served the cheesecake with the cranberry sauce that we used for the turkey! (Cranberries, orange, port) and tasted fantastic and very christmassey. Served with stewed fruit the second day and worked equally well. "

"Absolutely gorgeous. An ingenious twist on a Xmas classic and so easy to make. I used my own simplified version of mincemeat and it was very nice, not too sweet, lovely and creamy. "

"I halved the recipe for my hubby and I and reduced the amount of sugar. It was absolutely scrummongous! Part of the appeal was as well that it was so quick and easy to make (5 minutes job in the blender) but the result was magnificent. I will try variations of it with orange, or vanilla and Baileys. "

"Absolutely fantastic! Incredible texture for a microwaved pudding. I've since tried to make it with fresh chopped ripe pears instead of the lemon curd and it worked equally well. I'll definitely use that recipe as a base for other quick puddings!"
