"I just made this and it was incredibly easy. I only used one chilli but it was a hot one and gave perfect spice. The curry paste was easy to make and smelled incredible and I put a red pepper in it too for colour. However next time I make this I would use a bit more coconut milk as there wasn't quite enough sauce and the coconut flavour didn't really come through (I think because the curry paste was so flavoursome) I made it with chicken and used baby corn, red pepper, spring onion, aubergine, bean sprouts and fresh corriander leaves to garnish."
