Aubergine & chickpea curry

"To lower the fat content I used skinless and boneless chicken thighs and 2 tbsp of reduced fat creme fraiche instead of the single cream, but I also added some chicken stock. Loved the lemon and breadcrumb topping. Served with pasta. Fabulous."

Fruity teacake

"I used Sainsbury's Luxury Dried Fruit (which contains raisins, sultanas, cherries, apricot and pineapple) instead of the berries and cherries and it tasted wonderful. Moist, not crumbly. Love the crunchy sugar topping."

"I baked these rather than frying them to cut down on fat. They turned out very nice. Gas Mk 5 15 mins one side then turn over and cook for 5 -10 mins on other side. Also used coriander instead of parsley."
