"Had a bit of trouble with this one let's just say I'm no good with icing and my cake ended up looking like it was residing in the bog of eternal stench. However we found that (as my icing was runny) if we heated up each slice for about 30 seconds in the microwave as we ate it it was an absolutely lovely treat on a cold winters day. Oh and the reason my icing went wrong was because I didn't whisk it properly ah well you live and learn."

Lemon & honey chicken

"This recipe is brilliant I used mini chicken fillets and had them as nibbles at my Boxing Day party, they went down extremely well. I made them in advance and froze them and they were still delicious."

"I didn't use gluten free flour for these as I only had plain flour. However it worked just as well. I couldn't get any poppyseeds so I used sesame seeds which worked just as well. I also experimented with some other toppings such as coarse black pepper which worked really well and coarse salt which didn't they were too salty. I also made them up to stage 2 and then froze them using baking paper to separate them in the boxes I used."

Mini chilli beef pies

"Made these in advance for my Boxing Day party and froze them before hand. Cooked them from frozen and they came out really well. They were very popular particularly amongst the men. I did change the recipe slightly by only adding one teaspoon of hot chilli powder and replacing the second with half a red scotch bonnet chilli. i think next time I make them I will only use fresh chillis as I think they taste better than chilli powder."
