    Quick minestrone with tortellini

    Tested

"My tip, because there are only two of us, is to use only the amount of 'soup' we need for that meal , and freeze the rest without tortellini for use on another occasion. "

"I made this last week - without the Stilton - and found it to be delicious. Broccoli is one of my favourite soups, and this is a good one. I had crusty bread with Gorgonzola alongside - no Stilton as we live in France."

Moroccan spiced cauliflower & almond soup

    Tested

"I made this today for my husband - the soup eater of the family - and he pronounced it 'quite acceptable - nice for a change' and said it was worthy of four stars."

    Mushroom & goat’s cheese calzone

    Tested

"The stuffing certainly gets five stars. In the end I didn't have time to do the bread part of it, so just made a mushroom sauce according to the recipe (using lots of dried rosemary)) and served it with penne. My husband gave it the thumbs up and said 'don't lose that recipe!' However, I will make it some other time as calzone as that's what attracted me to the recipe in the first place."

"I've made these three times now and love them - much better than my usual recipe. I stuck to the recipe the first time, tried making it stretch to nine buns the second time, but found I needed that one extra bite to make them satisfying as I'm a very greedy person, so it's back to eight buns. I now use 75g sultanas and 40g chopped cherries, and after they are arranged on the baking tray, use a skewer to poke in any sticking-out bits of fruit so that they won't burn and turn hard. Any that aren't eaten on the first day I wrap individually in clingfilm, then give them 10 seconds on High in the microwave just before eating them and they're almost as good as new. Thanks, Beckie, for a lovely recipe."
