"The only vegetables my 5 year old would eat willingly was Sweet Potato. But this was so good she actually ate and LOVED the peppers, tomatoes and onion! It took all my self-control to stop my jaw hitting the floor, seriously! It is very yummy, I have to say. I doubled everything to feed our family, although I only used 1 teaspoon of chilli powder as most people don't like anything too spicy in our house. But I think it was just right anyway (although I would happily have it a little hotter). Did think the sauce was too runny, next time will add flour to thicken it, or possibly will change stock and tomatoes to tinned tomatoes. Allow 45 mins at least, as there is quite a bit of prep. On the whole a very pleasant meal!"
