"This was my first attempt at a baked cheesecake. What a success, everyone loved it. I also used the basic recipe (omitting the fruit) and made a lemon compote for the top. Yum Yum!"

"I have made this a few times now. As I don't like Aubergine I substituted it with mixed sweet peppers, very colourful. A nice quick easy meal, especially for a summer evening."
