Sticky pork with gingered noodles & kale

    Tested

"Really easy, but I would go a bit scant on the chili-pepper next time. Jalapenos are what we have here in Korea, and they are rather fiery. I'd use a red bell pepper for colour and just a pinch of "gotchoo-kahroo" [jalapeno flakes] for fire."

Spiced chicken meatballs with noodles, basil & broth

    Tested

"If you use well-drained (hung overnight in cheesecloth) tofu instead of breadcrumbs and put them into thin pastry or 'pizza-dough' circles, they are very much like Chinese 'potstickers' or Korean 'mandu,' especially when made with pork!"

Griddled chicory with figs & bitter leaves

    Tested

"Any bitter veggie can be "sweetened" with a dash of sour. Remember, bitter is alkaline and sour is acid, so one will neutralise the other. Eggplant and vinegar, chicory and lemon, so on and so forth. ;-)"
