Lemon drizzle cake

"I love the flavour of this cake but can anyone tell me why mine keeps collapsing in the middle? I haven't been using exactly the same size of cake tin and as I can't get self-raising flour here in Germany I add some baking powder to ordinary flour. It rises beautifully and then collapses - looks awful but still tastes good. Could it be the tin or baking powder?"

"Not sure, I was eager to make it because of all the positive comments but I think I made two mistakes, firstly I could only get boring German sausages you definitely need something with a bit of spice and secondly I blitzed the sauce as some had suggested and I think it would be better left alone. But the garlic toast was yummy and I have to say all plates were cleared so perhaps it was ok."

"I'm not a big fan of bananas but loved this cake. I was in a similar position to Serrento (18.5) and used walnuts, worked well. Will definitely make it again."
