Unbelievably easy mince pies

"Just made my first 2008 batch of mince pies using left over 2007 boozy mincemeat and they are delicious! I kneaded the dough a fair bit and was able to roll it out and cut it using a cutter no problem. I needed a good dusting on the work surface to stop it sticking but it worked a treat and my 3 year old son had a ball helping me. I sprinkled a little extra golden caster sugar on the top of the beaten egg to add an extra crunch, yummy! Definitely need to grease the tins and also let the pies cool a fair bit before you attempt to get them out, the pastry is still very soft when they come out of the oven and if you try and get them out when it's too soft they just fall apart (all over the floor in my case, but the dog seemed to enjoy those ones!). Will definitely use this recipe for my Christmas pies!!"

"Anyone know if I could prepare this dish and then freeze it BEFORE the final cook through?? Have a glut of home grown courgettes, so want to make one for eating in the next few days, and one to freeze to be defosted then cooked through at a later date.... Any advice appreciated!"

"I made this tonight and we all really enjoyed it (including my two year old son). I did make a few changes though.... 1) Instead of doing two layers of aubergine, I did one aubergine (grilled as in original recipe and well seasoned with salt and pepper) and one layer of thickly cut potatoes that I had preboiled and just roasted in the oven for ten minutes. 2) Instead of using cream cheese, I used almost a whole small tub of cottage cheese 3) When frying up the onion, I also added two crushed cloves of garlic 4) I added loads of dried herbs to the tomatoes * onion mixture - dried herbs and a good helping of oregano, as well as one teaspoon of Bouillion stock powder and a good helping of freshly ground pepper 5) I topped the breadcrumbs with grated extra mature cheddar cheese and cooked the whole thing in the oven Served it with peas. Yummy!"
