Roast duck breasts with maple syrup vinaigrette

"I made this as written exceept couldn't get wild mushroom so used shitake and chestnut, what a fab recipe, a definite keeper and very simple to make, loved by all who ate it. did do extra dressing as it was suggested, 1 1/2 times was plenty."

Barney's Confit of duck

"This is a recipe I use everytime I want to confit some duck (I have used it since it was first published but misplaced the mag and by luck found it here), it is brilliant because you save a small fortune on duck/goose fat, it may not be authentic but the results are no different from the "authentic" confit I have had in France so who cares if you are eating it within a couple of days, lets face it you only use all that fat to preserve it for later use anyway. As for the comment about it being over salty I can only assume the poster didn't use rock salt as I have never found it salty as long as you brush it off thoroughly it is only there to dry out the skin."

"This is a really easy, really tasty dish, served with steamed jasmine rice and some prawn or thai crackers and it can also be an elegant dinner party dish, lovely."

"Made this last night omitting the chicken as I had already prepared some tandoori chicken, did everything else as the recipe, add ng some mango chutney and homemade raita as sides with naans. It is a really good dish full of flavour which tastes like you have spent hours preparing it, one I will use many times with other Indian style spiced meats, many thanks."

"What a lovely cake, everything you say it will be, I loved the crunchy top, the spices though I do have to admit to swapping the quantities around as we adore cinnamon but you still got that almost christmassy flavour with the spices, lovely a definite keeper."
