"Yum yum! So simple to make and so fast! Didn't have any lemons so substituted lemon zest with a tablespoon of lemon curd and it gave it a lovely zingy taste. Also just put lemon curd in the bottom of a pudding bowl before microwaving so it melted into the pud when I turned it out. Easy peasy lemon (curd) squeezy!"

"Really delicious and so easy. If you have a lot of the broth left once you've eaten all the mussels, it's just too good to throw away! Save it for the next day and throw in some prawns and perhaps some extra coconut milk and serve with rice for a gorgeous Thai curry."
