"I made this dish to freeze and was very dubious at the time as I felt the pumpkin was too sweet for the dish. I used half fat creme fraiche which worked very well (it seems to work well in almost every dish needing a touch of creaminess). I used chicken thighs as they do well in a casserole and are cheap. When I finally, reluctantly defrosted and served it (with rice) it was a great success and I will definately cook it again (probably next October when there is a glut of pumpkins.) "

Indian spice box chicken

"Followed the recipe as stated. Sadly I think my store of fennel and cumin seeds were a little old and had lost some of their pungency. I also forgot to buy some coriander and had to add coriander puree instead. It still tasted delicious. I will definately make again - next time using newly bought spices and fresh coriander. I bet it will be 5 star! "

Mexican chilli chicken

"My husband likes anything chilli and hot! I was'nt keen but my husband enjoyed it. Used chicken breasts and upped the chilli factor. Used kidney beans. Not for me but there is no accounting for taste. He wants me to do it again. Maybe next year!!"

"This was a winner! I can't get my husband to eat fish at all. Told him we were having a fish curry for dinner and his face visibly fell! Followed the recipe as above and added some frozen prawns, frozen peas and a couple of tablespoons of half fat creme fraiche. Not so low fat but he thought it was delicious. I'm gradually winning him over to fish but it is an up hill struggle!! "

"Advice please. Followed recipe as suggested except i added half fat creme fraiche instead of single cream and rocket instead of spinach. Now I expect pasta dishes like this to go gloopy quickly as they cool down but this was gloopy within seconds of serving. What have I done wrong - cooked pasta too long? It was al dente. The taste was delicious but my stomach felt like a lead weight afterwards. What am I doing wrong? Any suggestions. If not sadly I won't be doing again"
