Roasted vegetable lasagne

"Made this last night - my boyfriend and I ate a portion each and I had enough left over to freeze four individual pieces. The only changes I made were to sprinkle some grated cheddar over the top before baking and I used dried (no pre-cook) lasagna sheets instead of fresh. It was really delicious - and healthier than any meat version (especially as I also used skimmed milk and light mozzarella)."

"Just made a batch of these and they are really light and fluffy. Tasty too, though I think I will add some bacon or sundried tomatoes next time. The mixture did look too dry when I mixed it all together so I added some extra milk and they turned out perfect."

"Wow! This was fantastic. I added green olives and served it with a side of pasta and roasted vegetables. Will definitely be making this again."

"I was making this for me and my three male housemates who have huge appetites so I increased the quantities and added a tin of coconut milk along with the stock. It turned the dish a rather murky colour but was very tasty nonetheless. I also added chopped peppers. Nice served with naan bread."
