    Chicken roasted with winter root vegetables

    "I have made this on numerous occasions when I have a lot of people to feed. I swap the veg for whatever I have in the cupboard (especially butternut squash) and leave out the cumin seeds and sage. I also prefer to use streaky bacon (stretched over a knife to get it thin) wrapped around the chicken breasts. This is a firm favourite!"

    "I have adapted this recipe for banana muffins (makes about 14) by increasing the flour to 200g, and baking for 20 mins. I also add a topping of brown sugar and cinnamon. They disappeared in 5 mins when I took a batch into the office today! They are SO easy to make and everyone loves them. "

    "With chicken thighs on special offer, I bought them with no idea how to cook them. I used this recipe but as I didn't have much time, adapted it by grating the zest from 2 lemons, mixing this with 2 tablespoons of olive oil and 1 teaspoon of freeze dried tarragon. This sat on the side while I washed and dried the chicken. Having slashed the skin, I rubbed this mixture into the skin of the 8 chicken thighs I had. Lastly I sprinkled a small amount of Maldon salt on top of each thigh. Baked for 45 mins in my fan oven, they were crispy and delcious. However, I agree with other writers who said the potatoes were greasy. They were very oily but my daughter's boyfriend, aged 17, managed to eat a mountain of them all the same! Fabulously easy to do though as the whole meal cooks itself!"

    Goat's cheese & thyme stuffed chicken

    "Did this for lunch on Sunday as I am a huge goat's cheese fan. Don't know what happened but it was very bland - living in Jersey we don't have access to a large range of goats cheeses - so perhaps I just chose the wring one. Would do it again but with a different cheese and perhaps some garlic to pep it up! Having said that all my guests enjoyed it and left clean plates so perhaps it was a success after all!!"
