"This was really nice, we used two really large sweet potatoes, two 400ml cans of coconut milk, and a can of chick peas. It took a while for the sweet potatoes to soften but it was worth it. We served it with naan bread and rice and it was fab. There was enough for us to have left overs the next day and it was so good I made it four days later. This is going to be a family favourite!"

Marrow & ginger jam

"I have just made this. It is my first jam making experience and it was pretty easy. I did have to cook it for an age before I added the sugar, and also I had to boil the jam for a lot longer than I expected. It does taste nice, a bit like lemon and honey drink :) I made 5 x 450g jars with a little left over."

"Nice recipe, I parboiled the potatoes first as suggested by previous posters and this ensured that they were cooked perfectly. I put in too much madras paste so it was quite hot but it was really nice. I also added some frozen french beans and some frozen peas which gave it a really nice sweetness. "

Veggie lasagne

"I am quite disappointed with this, the quantities are wrong and only stretched to serving two people. I had to add half a butternut squash, and two extra peppers.... In addition to that, the passata tasted raw, so next time I will probably just stir fry the veggies and add teh passata, leave it simmer before I assemble the lasagne. Fingers crossed."

Veggie shepherd's pie with sweet potato mash

"Really nice recipe, a real hit with the vegetarian guests at a large get together. The recipe scaled up really well, and it was easy to prepare in advance. There was too much wine, which meant that I had to simmer the dish for a while longer, but the carrots stayed firm so it was lovely."
