"I too made these at school with 10 eager helpers. Kids really loved making'shop' biscuits. The dough is difficult to roll if its not cold enough-resting in fridge is important. We also found keeping the top rings the right shape quite awkward, but then had great fun matching tops and bottoms. We made jam sandwich biscuits with the centres. "
