"I have often stuffed chicken breasts in a similar fashion following an idea from a well known luxury supermarket range, but using various cheeses - gruyere is a good tasty one. Following these recommendations I tried Boursin with garlic and herbs (softened with a little olive oil) and it was delicious. I always find that the filling tends to escape, so don't scrimp on the bacon covering - I always use a budget supermarket range of italian cured ham, cheap enough so I don't mind using the whole packet on one recipe, thus keeping my fillings tight inside, and the chicken moist. It's worth a try, and very easy, even if you're not that confident with cooking!"

"This is unbelievably easy, and tastes so good, it's become a firm favourite. Rather than overcooking thick chicken breasts, I 'butterfly' them once they're almost done to finish them off without drying them out. "
