Chicken & bean enchiladas

"This was great. The flavours are Mexican. We made guacamole on the side as a sort of salad with nacho chips to accompany it. Obviously something like enchiladas is not a one pot recipe and some work is involved but don't be put off by the comments that it's fiddly. The timings given are about right. "

Creamy pesto chicken with roasted tomatoes

"So easy to make and so tasty! Our small daughter loved the pesto. This is one that will be repeated often in our house. I didn't bother with the roasted pine nuts at the end and torn-up basil leaves but if we do it for guests, we will add them. "

"What a fantastic recipe! I only used half the quantity of beef and supplemented with more bread. Like other, I didn't have allspice berries so used some mixed spice instead. We all loved it and I will definitely be making this again!"

"Delicious! Don't skimp on the anchovies and capers which add lots of flavour. I didn't have mascarpone so used ricotta instead. "

"Great recipe. I left out the eggs because I was out but next time will try with them in. I also didn't have smoked haddock or the cheddar so I used some other frozen white fish I had in the freezer. Will definitely it again!"
