"I've made this a number of times now, it's super easy, very tasty and pretty healthy too. Just make sure you grill the aubergine with a bit of spray oil rather than fry it. I've served it at informal dinner parties with ciabatta and salad and it's all been demolished."

"This was prenounced by my mother as the best cheesecake she'd ever had. We didn't use the amaretti buscuits but made up a classic cheesecake mix (with 1/3 ginger buscuits, 1/3 digestives) and pressed it into the top of the tin. Bit of a struggle to get it out of the tin but was very nice"

"much better served warm than as a left over. If you make sure you get the onions really caremelised and sticky otherwise it's a bit dry."

"I made this when I visited my parents to use up their tomato glut. It went down very well and got polished off very quickly and my mum made sure she had the recipe to use again."
