"Enjoyed this as a light and healthy supper following biiiig buffet lunch! I threw in a courgette instead of a second aubergine and used dried mint with some fresh coriander in the bulghar wheat as that is what I had in stock. Also lime zest instead of lemon with a bit of extra lime juice thrown in. Would make again - came out nicer than I thought it might! "

Flambéed chicken with asparagus

"Made this last night as a going away meal for the OH and really enjoyed it. Unfortunately when I rootled through my cupboards for brandy we had magically drunk it all so ended up using dry white wine which I boiled down instead. As per the above, I also only had dried tarragon so added it in with the stock. I wasn't convinced that the asparagus would cook in this manner but it came out perfectly! Served with new potatoes, steamed broccoli and roasted carrots. "

"I haven't made this but if I were looking to reduce the fat I would do say 200ml of chicken stock and 200ml of low-fat coconut milk. 16.4 g of saturated fat is pretty high, in my opinion..."

"Really enjoyed this risotto - very flavoursome for such a cheap dish. I only used half the quantity of porcini and did not have enough spinach so also added leeks as well as peas as per rosi0904. The sweetness of the peas complemented the earthiness of the other flavours really well. I also only used 110 g of arborio rice and still had enough for dinner for two and leftovers for lunch!"
