"Have made the pesto version of this a couple of times and it is really quick, easy and tasty for midweek. An ideal way to use up that almost-empty jar of pesto in the fridge!"

"Used low-fat feta in a bid to cut down saturated fat and forgot to buy any cherry toms but still came out well! The grilled aubergines were a surprise hit. OH, who usually isn't too fussed about them remarked that they were 'OK' done this way. Would make again for a light, summery meal. "

Pork & rosemary lasagne

"According to my OH, this is one of the worst things I have ever made... Don't be fooled into thinking it is anywhere near as good as an ordinary, full-fat lasagne. I actually found the topping OK but the pork mix was really watery, although did have a nice flavour. I froze half, then reheated in the microwave which did soak up some of the water."

"Made this the other night for quick midweek tea and was very straightforward. Was surprisingly tasty; had never used sausages out of their skins before! I did not have any pasta sauce so added a time of plum tomatoes, a pinch of sugar and chill flakes and some dried basil then simmered for 10 mins or so. I also used low-fat sausages to reduce the saturated fat. "

"This was a quick and simple meal for a weeknight tea. OH even ate the avocado and we enjoyed the creamy marie rose dressing. We served it with petit pain. "
