"I haven't tried this yet but I agree the meat in the picture isn't skirt. I've had some butchers try to give me other cuts passed off as skirt too so take care where you buy!"

Seared beef with orange & chilli

"Delicious, lovely flavours & we all enjoyed it for my son's birthday BBQ. Don't over cook the meat ours was cooked medium & it was tender (although don't expect fillet steak tender!) The meat was rested as instructed. It was a hit, lovely cold the next day & will be cooked again & again. Do go to a good reputable butcher as sometimes other cuts of meat are sold as skirt which wouldn't be as tender. I pulled off the thin, skin like membrane which covered the meat before marinating it too."

Simmer-&-stir Christmas cake

"I've made this for several years now & is always good & moist. I up the ingredients a little to make 4 small square ones in my multicake tin, to ice & give away & they're always a hit. I gave one for a raffle prize & was asked if I'd make another one for her this year - must have been good! I make a big one for my parents every year. My sister uses the recipe regularly when she makes celebration cakes for friends & family. "

Fragrant chicken curry with chick peas

"I've made this several times - especially now I'm on a low fat diet - so easy. I vary the spices & sometimes add some baby leaf spinach to wilt at the end for a change."

"A wonderful, easy, tasty soup. Yes it makes loads, I had to use my large stockpot to make it. I had to put in more stock to make it more like a soup. I always add dried basil for flavour & sometimes add a couple of finely chopped leeks when I add the cabbage. It serves at least 8 hungry people! Popular with all of the family."
