"Very late to respond to Malibu's query - but NO don't even think about using chestnut flour as this dessert is not cooked - you wouldn't want to eat uncooked flour in a dessert! I used a tin of chestnut puree, it is in fridge setting ow , in 6 individual dishes, which I am then going to top with the melted choc/butter. I didn't use cognac (trying to keep costs down as I am making this for my village market stall) but more milk."

Hazelnut tart with orange mascarpone & strawberries

    Tested

"Dennis, I would think a 250g tub of mascarpone would be ample, once mixed with the cream, to fill a tart case of this size."

"Dary, you eat these for breakfast ?! Pinksandi, practically every cake will freeze perfectly and no one would be any the wiser. To defrost - take 'em out the freezer and leave them on rack until they've defrosted!"

"Made this a year or so ago and found the dried berries & cherries v.expensive, so good to see that its still good with "ordinary" dried fruit - although it would obviously not be such an interesting flavour. Actually the berries/cherries, which I bought from Lidl so a bit cheaper, turned it into a pinky-purple cake! I liked it a lot BUT it was horribly crumbly and impossible to slice, I suppose because its so low in fat."

"nearly forgot - also I used only 50g sugar as I felt 100g was far too much for a scone recipe."
