    "Have made these several times now, always very popular. So easy to make and keep well too, last batch lasted over three weeks just wrapped in foil - only cos my sons didn't know they were there at first, and I forgot about them! Didn't even have to be put in the microwave to soften. Coconut adds both flavour and texture"

    "Have made this several times and is always first dessert to go. Was making it late one night last week for BBQ next day and accidently added 1tsp of almond oil instead of vanilla - well I did say it was late at night - and was horrified cos I don't like almond flavoured stuff. Decided to bluff it out, but didn't need to cos it was still everyones favourite and had loads of comments on the 'unusual but gorgeous flavour' ;)"

    "Not quite as airy as I would have liked, maybe cos I used 3 lge eggs instead of 4 med. Wouldn't have thought this made much difference though. Filled it with fresh cream and home-made tangy lemon curd - delicious!"

    "I doubled the quantities as I had a crowd to feed. I balked at using 1kg of sugar so reduced it to 600g and they were just the right sweetness. I didn't reduce the amount of coconut though and found that it was very obvious they had coconut in them, it provided taste and texture. Even with doubled quantites I found the 45mins just too long, so maybe my larger tin was shallower. Went down a treat, out-eating all the other cakes I made :)"
