Fragrant mango & apple chutney

"I've just tasted batch I made 3 weeks ago... I was slightly concerned that it appeared slushy - however the taste & texture is superb... I cooked it in a huge jam pan that are readily available here in France in our supermarkets etc at this time of year, so didn't have the problem you are reporting about boiling it down... I also have some nice big chunks of mango in it as well. I used possibly too many black onion seeds and maybe slightly too much chilli - I used 2 dried (no seeds) and it packs a little punch... wonderful - family prefer it to bought mango chutney!"

Cauliflower, egg & potato curry

"It was great and easy to do... I added a whole jar of Pataks coconut & cumin paste (only one I had) plus before the coconut milk I added a small tin of plum tomatoes. Served up with my own hens soft boiled eggs, the home made mango & apple chutney, plus a nan bread each, it was a very filling cheap & cheerful curry that I shall use time and time again!"

"I'm in Normandy France so pickling vinegar is not available here - what are the suggestions for alternative?"

"I made this one today... it was easy and when I tasted before bottling up was delicious. I was slightly worried whilst it was cooking as the cider vinegar smelt very strong. This chutney I think will go well with pates as well."
