"Used an inch cube of fresh ginger root rather than ground ginger and a sprinkle of cinnamon too. Lovely taste, but too crumbly to spread butter on. Will definitely make again though!"

"Just cooking mine as we speak! Halved the recipe and had some mixture left over. Instead of throwing this away I filled a ramakin dish and baked in the oven at 170 c for 30 mins. Had a quick taste and its very fruity and still quite alcoholic. I'm sure that the 5 hour cook and the 2 month wait will make this a 5 star pud."

"These are fab. I added 100g of choc chips instead of the sunflower seeds - a request from the kids! Delicious warm - especially with melted chocolate drops inside! Found they made 12 standard muffins and needed an extra 3 minutes in the oven."

"Really delicious and was dead easy to make. Hubby thought he was being treated with having king prawns mid-week - didn't tell him how quick and easy it was to make!"

"Adults loved this - kids ate the icing and left the cake. Well apart from my daughter who seems to eat anything. I think the kids could sense this was healthy! I will make it again to ensure that this type of cake is the norm in our house!"
