"A dream for all berry lover alike. I used to make this as a kid - it's like the essence of summer in a bowl. If you're feeling really lazy or in a rush, you could always just use prefrozen berries, place into a blender with some sugar and lemon juice and blend to a cushed consistancy. Garnish with mint -voila."

"This cake is very good, though a little crumbly. The addition of pineapple is inspired - it works beautifully with everything. The only thing I changed was the addition of orange zest into the cream cheese icing. It just helps to give it a bit of citrussy lift that cuts through the cream cheese, giving another dimension to the overall experiance."
