"We loved this curry but maybe for the wrong reasons! (hence the three star rating) I too added 150g lentils and a homemade red thai curry paste. I cooked for 25 mins rather than the 15 mins specified because of the addition of the lentils and as other reviewers have commented the cauliflower wasn't cooked. I increased the sauce with an additional 1/2 tin of toms, water and 2tbsp of curry paste. The result was a very mild curry more akin to a vegetable stew served with basmati wholegrain rice and mango chutney (to spice it up a bit) There was plenty of oohing and aahing but not in my opinion because it was a brilliant recipe but because of the quality of the produce (star of the show was my FIL home grown cauliflower) and I loved the combo of cauliflower, lentils, spinach and tomatoes. Will make it again because of this reason. "

" Great recipe that I will do again...made up the batch to 1.5 times what is suggested in the recipe but doubled the curry powder in error. Curry taste was especially strong when immature, more fruitiness is prevelant 2 months down the line. Think it will be even nicer if i get the proportion of curry powder correct next time."

" Not overly keen. Used Madras curry paste because I thought the coconut milk would make it fairly mild anyway. Wilted spinach in at the end because really like it. Found that the aubergine and spinach gave it a slimy texture and the flavour wasn't particulary exciting...have recipes for much nicer vegetarian curries. Will stick to my tried and tested curries and won't bother with this one again."

"Gorgeous recipe, perfect combination, salty cheese, sweet peas, refereshing mint and lemon. Only critism would be that Haloumi was a bit too salty for our taste (myself and OH) but that is purely on a personal level hence five star rating. Used fresh peas and broad beans, definetly a summer dish that I will have in my repotoire. Will keep an eye out to see if anyone has success using a less salty cheese but will be a challenge finding a cheese that heats so well. "

"Very nice..courgettes tasted great and the chunkier rigatoni shapes went well with the sauce. Didn't have many cherry tomatoes so padded it out with a few tablespoons of shop bought mixed veg/tomato pasta sauce. For such a simple dish it was very tasty but a bit oily, okay of you don't have to worry about your weight, would be nice mopped up with some crusty bread. I won't use as much oil when I make it next time."
