Sicilian-style fish stew

"I adore this recipe! I have made it very often, and always get complimented on how full of flavour and tasty it is. No on guesses how little time and effort goes into it! Highly recommended. If I am being extra good, I use Fry Light instead of the oil, and leave out the wine, but its still wonderful."

Chocolate fudge cupcakes

"Second time of making these cakes, and the compliments I am getting from them are still amazing. Almost brownie-like in their taste, they are quite dense and rich, but really chocolatey and fudgy. The batter always goes further than the 12 cases (I got 18 out of last nights batch) and this time I halved the amount of icing I made, as there was so much left over the first time I made them. Half was just perfect for the 18 cakes. Would imagine they would be lovely without the icing too, but they are just so good with it! Is a bit messy to get the mixture into the cases, but I find that with all fairy cakes/cupcakes! Topped mine with mini smarties, sugar strands and white chocolate stars - there arent many left!"

"LOVED this recipe. Made it on a Friday night so it had plenty of time to bake, cool and then chill ready for a Saturday night feast. Everyone loved it. I made a raspberry coulis to go with it (kept it nice and tart, so it cut through the sweetness of the cheesecake) and it went really well. Will be making this again and again, as it was wonderful. Well worth the effort!"

"Have just done a practise run of these, as was hoping to make them as xmas pressies. However, the mixture stuck to the baking parchement so badly that I couldnt peel it off. So I didnt get to putting any chocolate on them! They tasted nice, if you dont mind picking bits of paper out of your teeth.... Not really sure if I will try again though, the taste isnt special enough for gifts."

"Yum! Took the advise above and used 1 litre of stock rather than 750ml. Really nice soup, very creamy and sweet, but with enough kick from the chilli to counter this. Lovely and filling, great for work lunches. Have frozen the extra into portions, so hope it freezes well."
