"I stupidly tried to halve this recipe and the curry paste was a disaster - there just wasn't enough bulk in the processor to get it into a smooth paste, and it smelt kinda weird too... also had to schlep out to the Chinese supermarket to get lemon grass, though the larger Tesco stores do seem to stock it dried I've found."

"Boyfriend did this for me and it was magic. We were fed up of eating low fat food that either a) didn't have any flavour and b) didn't contain meat. This really ticked both boxes, tasting satisfyingly authentic despite having none of the bad stuff in it; he used hot curry powder instead of mild because our low-fat diet has made us impervious to chilli. Bring it on!"

"I fiddled with the recipe quite a bit, adding a can of tomatoes, a splash of garlic olive oil and fresh green chilli instead of the Tabasco; it was fantastic and a great way to use up vegetables."

"I wasn't shy with the chillies - even though I halved the amount, I still used a whole chilli and it was great with the ginger. It's not easy to find low-fat recipes that have much flavour, but this definitely delivered! I was also seriously dubious about the rice instructions, and was convinced I'd burn it, but it worked fine and had an authentically sticky texture. Excellent!"

"Boyfriend seemed to like the Moroccan vibe - nice lemony taste but it was slightly lacking in flavour overall. Still, very quick and healthy and may well try again with more spice and some red peppers."
