"As many have commented the batter was too thin and so I added more flour. The first batch came out perfectly, the second batch not so with the batter not sticking to the chicken, probably due to a drop in temperature of batter whilst first batch cooked. Nice recipe though and I shall make it again."

"Served this with wide Italian noodles and used cream substitute. I buy either an oat or spelt one and it works well. (I have a dairy intolerance but it cuts back on the calories too). Sauce reduces quickly if a wide pan is used. Also added a splash of Marsala wine. really lovely and some dried porcini mushrooms as selection of wild mushrooms not wide today. Absolutely lovely. "

"Absolutely delicious. Didn't have cajun spice mix but made my own up and managed most of the spices in traditional mix. I think that I did add more stock than suggested. Will become a staple although the fat content will depend on what chorizo is used...I buy mine here in Spain (chorizo Asturiano) and they are magnificent but do have a fair amount of fat but this just makes the rice lovely and sticky."
