Goat's cheese & bacon rosti

"This is my default recipe for using up half a pack of bacon and the old baking potatoes kicking around at the back of the cupboard! It is lovely and tasty and the tip to boil the potatoes first ensures the rosti is always cooked through, something I have struggled with in the past. I agree with luv2eat that extra goat's cheese is a winner and I like to drizzle a little honey and plenty of black pepper on the cheese too. I often eat it with poached eggs for a real comfort supper."

Satay chicken pieces

"I ate this hot out of the oven with some rice but I can see that it would probably be better eaten cold as intended as the flavours are quite delicate and would probably be more apparent when cold. I added half a chilli to the mixture and next time I would omit the cumin as it seemed a bit at odds with the rest of the flavours."

"Really easy to make. After reading the comments, I was worried about it setting so I whipped the cream lightly to give the filling more body. I also did as someone else suggested and only added the chocolate to half of the cheesecake mixture and then layered them so I got a pink and a brown layer. I'm glad I did this as the chocolate layer was a bit "sludgy" looking but tasted great. To make it more attractive, I drizzled dark chocolate over the top and piled some more raspberries in the centre and it looked fantastic. I didn't have a loose bottom tin so I lined my cake tin with clingfilm, made the cheesecake, froze it for a couple of hours, removed from the tin using the overhanging clingfilm, then left to defrost in the fridge for 2 hours. I always make my cheesecakes this way and it makes getting them out of the tin a doddle."

Carrot & cream cheese cupcakes

"Made this recipe again but as one large cake. If you increase all the ingredients by 50%, it fills two 20cm cake tins perfectly and was as yummy and moist as the individual cupcakes."

"I made this last week and it was a great success and I am not even that keen on watermelon! Heeding previous advice, I halved the amount of chilli. I also used spring onions instead of the red onion which worked well. I am going to try upping the dressing by 50% next time as it wasn't very evident although it did bring out the flavours of the other ingredients well. For a more substantial meal, I think it would be tasty with some thin rice noodles."
