"I have made this several times and it is always well received,I gave the recipe to my sister and she made it, and also made one with chocolate spread instead of lemon, the kids loved it. I am going to experiment and make one with blackcurrant coulis, I'll let you know how it works. Brilliant versitile recipe. "

"I made this for a dinner party and my friends were so impressed that they have asked me to make one for their next party.I make my own lemon curd which is quite tart so I didn't find it too sweet.I intend to make several over the summer."

"These are really nice, I made them a lot smaller as I like to put a few small ones on a cheese board instead of cutting into one big one. I made 20 out of the mixture. I will use some of them as presents. Good recipe."

"I made this to go with the babootie and yellow rice. I found that it made rather a lot but my friends loved all of it and they went home with the recipes and a spare jar of the apricot. I added a bit more sugar as I thought it was too acidic. It was all very good and I will definately make it again. "
