Irish soda bread

"Tastes great and a quick and easy loaf to make but I find that it does need much more flour than the recipe states as it always comes out very wet, I haven't yet managed to get it to a state where I could even think about kneading it, its usually more a case of getting it not sloppy enough to get it in approx the right shape on the tray - always tastes good though! My (Irish) mother always made soda bread with sour milk, today I soured some milk with lemon and used some soured cream I had left over too. Another tip is that you need a pretty big mixing bowl!!"

"I halved this recipe and put into 12 fairy cakes (better for my small children). I also didn't cream the butter & sugar etc just bunged it all into a bowl and beat with electric mixer - mixed in 5 minutes and baked in 20 - my daughter was still licking the bowl!! "

"Fantastic recipe, I've now made it a few times and am always asked for the recipe - almost don't like to admit how simple it is!!! I made it with 1.5 x biscuits too and last time put far more raspberries in (wasn't concentrating) it worked fine still. Mine always cracks on top but that just reaffirms that its home made!! I made the coulis with grapes and apple juice to sweeten it rather than sugar - that works really well. Will try the lowfat version next time."

"This was absolutely fantastc, easy to make and perfect comfort food. The only negative is the calorific value!! But it is very rich so a little does go a long way, I would say that this recipe could feed 6 if you served with with some salad or vegetables."
