"I did this using quorn sausages, and added some mushrooms along with the tomatoes. Perhaps because I used a casserole dish rather than a roasting tin, after the prescribed 40 mins at the temp for a fan oven the onions and pepper were still raw. I had to turn up the heat and cook it for a further 25 mins for it to be edible, and the veg were still quite crunchy. I think if doing again I also would fry off the sausages first to brown them as they were a bit pasty looking. Also agree with the previous comment about too many onions. When it was finally served the family thought it ok, but I won't particularly rush to make again."
