Chilli chicken one-pot

"Made this for a mid week tea, made the night before too. Changed the quantities as follows which i would say serves 5/6- 150g chorizo (to reduce calories), 2.5 peppers plus 1 chargrilled pepper from jar(what i had in the cupboard), 750g chicken breast cut into large chunks, 1 can kidney beans and half a can of water as suggested, the rest of the ingredients i kept the same. The result was lovely. My husband heated it up on the day and thickened it up with a few gravy granules and also some cornflour. I fried the chorizo then then the onions as suggested which was a great tip. Didn't bother with the avocado or coriander. I served with homemade garlic bread just like the recipe! Will definitely make again especially if entertaining!"

Easy apple fruit cake

"Made this cake at the weekend as was given some cooking apples. The cake was gorgeous. Very easy to make as you more or less put everything in at the same time and mix together. I only had caster sugar and had no raisins just sultanas. Still worked fine. One tip i would give is to prepare your apples at the last minute, otherwise they will go brown! Luckily i did this but they were still starting to go brown just before i put them in the mixture. I baked the cake for longer as suggested, for about 1 hr 25 minutes i think. Didin't bother icing as suggested. The cake seemed to taste better the next day, and was easier to slice as i stored in the fridge. Will definitely make again. I have given the print out of the recipe to my mum, who loved it, and she's really good at baking so she knows a good cake when she tastes one!"

"Made these today. Were very nice. Halved the ingredients as there's only 2 of us. Didn't have red onion so used white, no chilli, so used 1/4 tsp chilli powder.Recipe didn't state whether to crush the cumin seeds, so did just in case with pestle & mortar. Had been given massive courgette from friends allotment, so wasn't sure how much to use, so grated 200g which seemed to be ok. Did as suggested and squeezed the water out of the courgette first which seemed to work. Didn't make the salsa, as couldn't be bothered even though i had all the ingredients! Think the salsa would have been nice so will make next time! Would make again definitely."

Cumin-scented chicken curry

"I made this yesterday for todays tea after reading all reviews. Was a bit worried about the 'bland' reviews, but I'm glad i ignored them as it was delicious. I used chicken breasts, and ground up half a teaspoon of dried chilli flakes as didn't have fresh chillies. To avoid any curdling i just mixed a table spoon of yogurt to the tomato puree and added that to the pan with the water and cooked for half an hour. I also crumbled in a chicken stock cube in before simmering. I probably used 3 tablespoons of tom puree. When re-heating the curry today i added the rest of the yogurt, which worked fine and didn't curdle at all. I added a tablespoon of sugar, as thought it may enhance the flavours. The fresh coriander finished it off nicely. Will def make again. Give it a try, it is very easy and quite quick."

Mum's leek & potato soup with mustard toasts

"Just made this tonight for my lunch tomorrow. Halved the ingredients as didn't have enough leeks, so used two large leeks and two small potatoes. Was very easy to make, very quick. Didn't bother with the bacon, to keep the calories down, save time and didn't think it would need it, as other reviewers said. Think i over salted the soup which is unlike me, so will be more careful next time. Tasted nice and creamy to say it only had stock and milk in. Would definitely make again and recommend anyone tries."
