"Just made this in order to give as Christmas presents. Armed with the previous comments, I used my biggest pan, a sugar thermometer and doubled the amount of Baileys. Very glad I used an enormous pan - it really does take up all of it! And the sugar thermometer takes all the guess work out of it and makes life much easier. I was worried about the chocolate burning putting it straight into the pan so instead put the chocolate into a cold bowl and poured some fudge over it, mixed it in then added the rest. This cooled the mixture down enough to prevent the chocolate burning but then had to get it into the tray pretty quickly as it was starting to set. Tip for smoothing out the top - a wet spatula or palette knife works a treat even when the mixture is cooling quickly. It looks like it will be set very quickly. I've scraped round the bowl and sampled it already - delicious! "

"Made this today and found it very very easy and the cake was fantastically light and moist. I made the icing with milk rather than dark choc so not quite so rich, but seemed to go really well with the cake. Very impressed!"
