"Bit of a hassle to prepare, and for some reason the veg didn't soften enough in the oven so some of the carrots were rather crunchy! I used tinned beans and didn't use celeriac because I don't like it much. The overall flavour was very good, and my kids quite liked it. I'll try making it again but I'll just turn up my oven next time to get the veg well roasted!"

"I made these with my kids and used a melon baller, which solves the problem of melting. The girls then had great fun swirling the balls around in the coconut. They gave some to their teachers at Christmas and I think it's the start of a tradition!"

"I enjoyed this dish, and the celeriac made an interesting change from potato. It was really quick and easy to make and my children ate it too, although with some hollandaise instead of the mustard dressing."
