    "Made this as a dessert for our first bbq of year - it was delicious and so easy! So impressive that I've made it twice since with a bit of a twist: I used raspberry curd and fresh raspberries instead of the lemon and the next time, lime curd with chocolate drops mixed in. I served these last two with chocolate chip cookies. Intend to carry on right through the summer with every variation I can think of and to take into account fruits in season! "

    "I cooked this dish for my 90 year old mother who normally eats very bland food - she loved it, couldn't believe how light it was and commented on the lovely spring/summer 'colours' on her plate! It was very quick to make and my sisters are all requesting copies of 'mum's favourite dish'!"

    Rhubarb & custard pie with butter crumble

    "Rhubarb crumble has always been my favourite pudding - not any more. This was a taste sensation! My tin was a little shallow so I poured the excess custard into two individual dishes and we had that the next day with some stewed rhubarb. Also the left-over pie was delicious cold. Did also double the topping which was wonderfully crunchy."

    Slow-cooked lamb with onions & thyme

    "For once I was able to join the family for a Sunday morning walk as this dish could be left to cook. We were greeted by a delicious aroma on our return and although I made enough for 10 hoping to freeze a portion or two, 7 of us polished it off! A wonderful flavoursome dish which will be repeated often."
