"This is really yummy and was fabulous with Salmon En Croute (Olive Recipe) just the right amount of bite to match the salmon! We finished the leftovers off with Bacon and Peas the next day and it seemed to taste even better in fact I think a poached Egg would have made it perfection!!! I will definitely make this again!!!"

"This was so easy even though my food processor died minutes before making the watercress part so I substituted the watercress, spinach & rocket salad for some pesto and mixed it with the mascapone and grated in some lemon zest with a good amount of blackpepper - it was fantastic and got rave reviews at my party, I have never cooked fish so successfully. This dish is so easy that even I made a pretty looking pie that tasted fantastic!!! Looking forward to making this again!!!"

"I made this soup for a starter at a dinner party and it was fantastic absolutely no bother to cook although I didnt make the croutons and found that is was such a wonderful texture when blitzed that I didnt sieve - will definitely make again as it is perfect for lunch, tea or just a bowl of comfort!!! "

"This is a favourite superfast recipe although it has undergone some changes I add olives and it is particularly nice with cherry tomatoes baked on top and if I have any left over ricotta knocking around in the fridge a few blobs applied between the mozarella is really lovely! Perfect after a long week when you are worn out and want a meal that hugs you back - ready in no time - perfect!!!"

"This recipe is gorgeous and soooo easy that even I can make it - I've made it a few times now and it is also delicous with honey smoked salmon flakes too. Really worth a try and wonderful with a glass or two of white wine!!!"
