    "Very very delicious and pretty easy to make. Used golden syrup instead of maple syrup and reduced the amount - 4 Tablespoons, quite sweet enough for us, used 1 teaspoon of vanilla essence. Everyone loved it, will definitely make it again. Good that it was low fat too! "

    "First made this cake earlier this year and I've made it many times since, sometimes with chocolate topping, sometimes without, depending on occasion. I can now say it always works (even if made with small helpers!), it's absolutely delicious every time :-)"

    Sticky stem ginger cake with lemon icing

    "Most delicious and easy to make ginger cake! Made it some time ago and although it was good I thought it a bit too gingery - but fortunately saved the recipe! Tried it again a few months ago, misread the amount of ground ginger (used 1t instead of 1T), left out the stem ginger and we all loved it!! Delicious taste, easy to make, lovely warm glow from the spices. Next time used 1&1/2t ginger which is just right for our taste. This cake is now one of our favourite everyday cakes :-) and so good to know it's low fat too!"

    The ultimate makeover: Carrot cake

    "Absolutely delicious cake - one of my regulars and everyone always loves it, light and tasty (good to know it's light and healthy too!) A few changes though - I don't separate the eggs (too fiddly!) but instead beat whole egg with the sugar in one go, it still works as well. Use sultanas instead of raisins (sweeter) and sunflower oil instead of rapeseed. I also don't make the frosting, no-one misses it and the cake disappears in no time! :-)"
