"This is a great recipe: tasty and easy. The simplest way to stuff the cannelloni tubes is to use a round ended knife to scoop the mixture off the bowl and push it into the tubes. It is quite therapeutic really, only don't make this if you're in a hurry! I tried to reduce the fat content by making a bechamel sauce with semi-skimmed milk and a little gruyere, plus a bit more gruyere on top; also I didn't include wine in the tomato sauce to make it lighter. I used lots of fresh thyme and basil as well as a tsp of smoked paprika - love the stuff - and it turned out full of flavour."

Blackberry & apple loaf

"Wonderful cake; it's impossible to eat only one piece. It is moist and fruity. The only changes I made were using raspberries instead of blackberries and I substituted 50 grams of the flour with 50 grams of ground almonds. I think replacing some of the flour with the same weight of ground almonds makes the cake even more moist and yummy."

"This is absolutely delicious and easy to make too. Not only does it look lovely but it's very healthy too. Brilliant for both vegetarians and meat eaters. I made it exactly as the recipe says and we ate it with poached salmon fillets. Would be suitable for a packed lunch or a picnic too. I used a Merchant Gourmet pouch of ready cooked Puy lentils. These are so tasty!"

"I think these will be even better with double the quantity of pistachio nuts - these are so tasty and the bright green look like little gems. I will also substitue the fruit with chopped dried apricots."
