Coffee cream & walnut cupcakes

"I was slightly disppointed with this- found the coffee amounts confusing and in the end couldnt taste coffee at all! I would recommend shots of expresso for real coffee lovers and 18 mins in my fan assisted oven was too long! "

"tried this recipie for the first time and really liked it- my patties crumbled at the first attempt but leave to fry for 2 mins each side and they stay pretty solid. I also added a red chilli, fresh mint, coriander, a slpash of lemon juice to the mixture, and plenty of salt and pepper. We had them with pitta bread, salad, natural yoghurt dip with mint, cucumber and coriander and also the beef tomoato stuffued with cous cous recipie.. absolutely delicious! mmm"

"I uses natural yoghurt instead of greek yoghurt- worked really well and highly recommended- v.tasty! (I also used this dip alongside the spicy falafal recipie)"

"It was the first time I have tried this recipie and I love thai food - it was great, very easy to follow and quick to do. My only suggestion would be to omit the tbsp of sugar as the butternut squash is fairly sweet, and if you like your food spicy add a chilli and some ginger and garlic too. Looks and tastes great, definitely worth a try!"
