Roasted vegetable lasagne

"Made this yesterday, very tasty: I used courgette, mushrooms etc as well just whatever I had in the fridge and I also added a tin of chickpeas to bulk it out. The tomato sauce did taste a bit sharp after I had made it but added to the lasagne I couldn't notice it......kids ate it all too so will make again...."

"I have just made this again this morning and forgot to add the other thing I do is, rather than add the spinach when the pasta is still in water, drain it first then wilt the spinach just in the warm pan of pasta. Somehow seems less 'soggy' as it is also going to be cooked in the oven. Might be a personal thing as I like my spinach as raw leaves best anyway. Looking forward to eating this again tonight yum!"

"This was tastier than I thought it might be and the kids both ate it. I served it with new potatoes and broccoli and will make again as so easy and not too many ingrediants. I also added mushrooms to the sauce as previously suggested which was good and bulked it out a bit more. Have frozen the leftovers and look forward to seeing if that adds to the flavour next time we have it!"

"This was nice but myself and my husband both felt there was something 'missing', despite using more spice as other comments suggested. Unfortunately, we still can't decide what the missing this is! Tasty though and would make again, maybe just using some different ingrediants next time."

Chicken, sweet potato & coconut curry

"I personally found this bland and it needed much more paste for my tastes but on the plus side both my young children ate it. I often freezer curries containing coconut milk and they seem to defrost and re-heat quite well so I would say fine to freeze: I made quite a lot of this so froze a number of portions and have already defrosted one for the kids which was fine....."
