"The blueberries do sink but thats the beauty of it. I make it exactly as the recipe states, have made it today to take away on a girlie pampering weekend. The first time I beat it by hand but every time after I have used electric beaters as it is hard work otherwise and the result is a much higher, fluffier cake. The icing will thicken if you refrigerate it immediately and then just get it out about 30-40 mins before you want to eat it x "

"I made this by accident!! Was supposed to be making curried meat balls but with the kids screaming for atttention and my mother ringing at the crucial moment I automatically started to fry the mince before I had made meat balls. I then thought about turning into a spaghetti dish so added a jar of jamie oliver's pasta sauce with garlic, toms whole olives and capers. Then I realised we were having pasta the next night so i frantically searched good food for a non-spag bol tasting mince dish and found this. I added mushrooms, paprika, sultanas, a few chilli flakes and used a tikka masala paste as thats all I had. Although it probably tasted nothing like it should it worked really well, the texture is lovely with the added bread and it was delicious, even my son who doesnt normally like mince dishes had two helpings. I will make it properly next time but would add a nice cheese (not cheddar) to the egg mix x"

Saffron rice with chicken & peppers

"This is a delicious recipe, I have made it twice now. I found you needed quite a lot of saffron to get the taste and colour so added more the second time. Doubling this up and making it today for a family party as its so easy and fairly quick and loved by kids and adults as not spicy"

"I found this a bit unexciting and lacking in flavour as a meal on its own but its easy to spice it up with other ingredients. I tend to just add whatever I fancy from the fridge and add plenty of seasoning and bake in the oven which could be cut up and served as a tapas dish at barbecues"
