"I have used Mich Turner's Moist Carrot Cake recipe in "Spectacular Cakes" (pub. Jacqui Small) with great sucess. She gives quantities for 6", 8", 10" 12" tins for carrot cake, luscious lemon cake, choc truffle torte, coffee & walnut and trad. fruit cake. Recipe quite long, but can provide it if you like..."
