"Even though I'm a lover of quince with cheese, I found this to be very sweet, and overloaded with a few things. In the less column: raisins (400g), vinegar (5-600ml), sugar (500-600g) perhaps use a darker sugar, but only 500g In the more column: apples (2kg) The extra sweetness was probably down to the fact that I used eaters instead of cookers (the extra sweetness would be needed to cut through the cookers, but even so probably not that much. "
