"Smashing mid-week supper. I use pork & beef mince for more flavour & fry some chopped bacon, chopped onion & a couple of crushed garlic cloves in with the leeks. I also add some freshly grated parmesan to the topping mixture. This meal freezes very well."

"Fantastic recipe & so easy too! No more dipping stuffed chicken breasts in egg & then in breadcrumbs....no need now, all far too messy. The crumbs were lovely, golden & crispy & the pine nuts were a great addition. I've made this loads of times & it's always great!"

"A really easy & tasty pie, the only thing I changed was to add a sliced onion in with the leeks which gave a little extra flavour. Just the thing for a hot evening here in Greece & of course served with a nice Greek Salad."

"As I live in Greece I'm always looking for something simple for the hot evenings here.....& this is just the thing! I poach chicken breasts with some "Chicken Seasoning" & leave to cool in the water, which keeps the meat nice & moist. Don't find spring onions here very often, so use sliced red onion & I always add a couple of thinly sliced Roasted Red Peppers in Oil (a very useful Greek product)."
